The word cava (Catalan for Wine Cave) is used to describe the sparkling wines that are produced throughout various regions in Spain. A Cava must be aged for at least 9 months. The varietals used in Cava production are Parellada, Macabeo, Xarello, and Mourvedre. These grapes produce a crisp, clean, fruity, sparkling that defines the Cava experience
